Favorite Sourdough Discard Saturday Morning Pancakes

  • 2 cups flour (I use 1 cup of Ground Up Whole Wheat or All Purpose and 1 cup of Ancient Grain Bread Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp salt
  • 2 Tbsp sugar
  • 1 ½ cups of milk
  • 1 cup of sourdough discard (I usually take mine from the refrigerator, sometimes it's active, sometimes it’s not) 
  • 2 Tbsp of oil (I use avocado oil)
  • 1 egg
  • Chocolate chips or blueberries


  1. In a large bowl, whisk together the flour, baking powder and soda, sugar and salt.
  2. Add the sourdough starter, milk, egg and oil. Mix well just until combined.
  3. I use a cast iron pan which does not need to be sprayed with anything. If you are using a griddle, spray it with cooking spray or butter.
  4. Pour ¼ cup pancake batter on the hot griddle. I usually add chocolate chips or blueberries to this step. Cook until the pancake starts bubbling on top, then flip the pancake.
  5. Cook until pancakes are cooked through - 1 or 2 minutes more.
  6. Serve with butter and syrup.

INGREDIENTS (no discard variation)

  • 1 1/3 cups flour (I use all Ground Up Ancient Grain Bread Flour)
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 3 tablespoons oil
  • 1 large egg
  • 3/4 teaspoon salt
  • 1 1/4 cups milk


  1. Follow the same instructions as above, except just mix everything together at once.
