INGREDIENTS
- 2 cups flour (I use 1 cup of Ground Up Whole Wheat or All Purpose and 1 cup of Ancient Grain Bread Flour)
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp salt
- 2 Tbsp sugar
- 1 ½ cups of milk
- 1 cup of sourdough discard (I usually take mine from the refrigerator, sometimes it's active, sometimes it’s not)
- 2 Tbsp of oil (I use avocado oil)
- 1 egg
- Chocolate chips or blueberries
INSTRUCTIONS
- In a large bowl, whisk together the flour, baking powder and soda, sugar and salt.
- Add the sourdough starter, milk, egg and oil. Mix well just until combined.
- I use a cast iron pan which does not need to be sprayed with anything. If you are using a griddle, spray it with cooking spray or butter.
- Pour ¼ cup pancake batter on the hot griddle. I usually add chocolate chips or blueberries to this step. Cook until the pancake starts bubbling on top, then flip the pancake.
- Cook until pancakes are cooked through - 1 or 2 minutes more.
- Serve with butter and syrup.
INGREDIENTS (no discard variation)
- 1 1/3 cups flour (I use all Ground Up Ancient Grain Bread Flour)
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 3 tablespoons oil
- 1 large egg
- 3/4 teaspoon salt
- 1 1/4 cups milk
INSTRUCTIONS

Follow the same instructions as above, except just mix everything together at once.
