At our mill we love ancient grains. Our pasta includes a blend of durum and organic barley flour to provide the best texture and flavor.

Barley is ancient and is a grain high in a type of fiber called beta glucan, a soluble fiber recognized by the FDA for its ability to lower cholesterol. It also has high magnesium content helps control blood sugar and insulin levels, aiding in diabetes prevention as well as heart health.

Growing a Local Pasta

As we experimented with pasta from our wheats it became clear that we needed to nerd out more on grains specific for pasta. This meant facing the question of can we grow local Durum?

In almost any local supply chain other than in Italy, it is uncommon for farms to grow local Durum. However we had a local farmer who was up for the adventure.

From Mill to Meal

We stone mill all of our pasta flour for maximum nutrition and freshness. The beautiful aromas and flavors that come from these grains some through in our noods.
