
Cookie Baking Class
This class will highlight various ways of making classic “American” cookies, with a Ground Up Grain twist. All cookies will be made from 100% stone milled flour, sourced throughout the Northeast. Once discussing the basics and practicing a few formulas you will have to opportunity to try your own cookie. Playing around with basic flour, fat, and sugar rations can yield drastically different cookies, and almost any ingredient can be added in at the end, be creative!

What To Expect:
This class will take place in the newly installed bakery space on site at Ground Up Grain. Upon arrival you will be introduced to this space and will quickly be loading bread into our electric hearth oven (powered with hydropower with sustainability in mind) to take home. Yes, you’ll be at a cookie class, but who doesn’t love fresh baked bread! While the bread bakes we will discuss the basics of cookie formulas and mixing methods. We will also take a tour of the mill and discuss the benefits of using locally sourced grain and stone milling.
As the “educational” part of the class rounds up the hands-on portion begins. Grouping into small teams you will choose a Ground Up Grain cookie formula to practice with, before designing one of your own. Think about whether you like a cookie chewier, sweeter, or with unique add-ins. Feel free to request a certain ingredient to add in or bring some yourself!
Teamwork will be essential, as we will be sharing the bakery equipment, but don’t worry, there will be plenty of cookies to bring home and share with friends and family!
Classes are roughly 3 hours long and you will be standing for this time. Please wear comfortable, close-toed shoes, bring an apron, and tie back any long hair.

Although cooking experience is not required, having a solid understanding of measuring ingredients and mixing doughs is recommended.
